Fall Favorites from the Co-op

Like it or not, the cool weather has arrived. Whether you are heading out for a hike or enjoying a good book by the fire, the Co-op Deli has what you need to fuel your favorite fall activity. Stay warm with these comfort food recommendations from the Co-op Deli.
 

Nothing complements a perfect, brisk fall day than a bowl of our tasty and filling soups. I love the Green Chili Chicken, Split Pea and Rosemary Red Lentil. The Beef Chili is another delicious option, you can’t go wrong!

With the fall chill in the air, warming spices are where it's at for me. I love our organic Pumpkin Spice (cinnamon, clove, nutmeg, ginger, allspice in simple syrup). I made our Pumpkin Spice syrup the other day and the aroma intoxicatingly filled the Deli. Perfect in a latte and can be added to any drink imaginable.

My pick for fall is the Butternut Squash Lasagna and Garlic Parmesan Mashed Potatoes. The basil bechamel and all of the mozzarella in the lasagna is delicious and very comforting. And who doesn’t love good mashed potatoes? Our Garlic Parmesan Mashed Potatoes are filled with garlic, butter, parmesan and of course, are fantastic.

With autumn comes chilly mornings filled with hot cider and frosted pumpkin cookies.These have everything you want in a fall treat, flavorful pumpkin baked into soft cookies topped with a sweet frosted layer. A seasonal favorite of mine.

May Day Community Block Party

On May 1st, several Southern Oregon businesses came together for a block party to provide a space to gather as a community after a rough spell due to the pandemic and fires. The May Day Block Party was hosted on Main St in Phoenix, where the scent of food trucks mingled with artisan goods such as local cheeses, locally farmed flowers, and even fresh-baked pastries.
