Shopping on a budget never tasted so good! In this free class, learn how to prep and prepare flavorful and fun meals on a tight budget. Looking to cook healthy meals at home, while reducing your grocery bills? Well, then this class is for you.

We’ll start with a healthy appetizer and salad while our Education Coordinator shares healthy food preparation tips for a tight budget. Sit back and relax while our Outreach Assistant prepares a money saving entree and helpful meal planning tips. Come hungry!

This class is limited to 15 people who have not yet taken the class. Please sign up early. The class is free, but requires a $10 deposit at sign up which is returned to you on the day of the class in the form of a Co-op Gift Card.

Instructor: Stephanie Koerella

Originally from New Jersey, Stephanie began exploring the world of food in her Sicilian family kitchen. Standing by the warm oven, she learned about love through homemade gnocchis, lasagna and biscotti. She never once stole a meatball after being lured into the kitchen from the smell of Sunday’s dinner; not once! ;) Upon graduating from Rutgers with a Marine Science degree, Stephanie pursued her love of the ocean by obtaining her 200-ton captain’s license and working on sailboats in South Africa, the Mediterranean, Caribbean and Indian Ocean. After sailing over 25,000 nautical miles, she missed the comforts of land, so she returned to her marine science roots to study sharks, fishes and marine invertebrates in Australia. Fate brought her to Ashland where she fell in love with her husband. As a self-professed Price Comparison Queen and Zero Waste Hero, Stephanie aims to help people spend less on their monthly food bill. Her superpower is teaching others how to eat healthy organic food AND save money!

Mahlea Rasmussen

Instructor: Mahlea Rasmussen

Mahlea Rasmussen has been happily employed at the Ashland Food Co-op since 2013. Starting in the Deli and later moving to Produce, she has been given a unique perspective on many aspects of the store. Before working at the Co-op, Mahlea graduated from Southern Oregon University and has a background in Theatre Arts and Communications.  Her favorite part of working at the Co-op is sharing her love for cooking, community and product knowledge. Mahlea is also happy to be able to share and show off her cooking skills through the Meal Solutions program and Co+op Basics Cooking Class.
