2 cups wheat berries washed and drained
6 cups water
½ cup raisins
½ cup sun dried tomatoes chopped
1 cup cucumbers chopped
2 cups spinach washed and chopped
2 cups garbanzo beans cooked
2 tablespoons fresh mint chopped fine
1 cup feta cheese crumbled
⅓ cup fresh lime juice
⅓ cup extra virgin olive oil
1 tablespoon fresh ginger peeled and grated
1 teaspoon ground cumin
½ teaspoon sugar
½ teaspoon sea salt
1 clove garlic minced
6 cups water
½ cup raisins
½ cup sun dried tomatoes chopped
1 cup cucumbers chopped
2 cups spinach washed and chopped
2 cups garbanzo beans cooked
2 tablespoons fresh mint chopped fine
1 cup feta cheese crumbled
⅓ cup fresh lime juice
⅓ cup extra virgin olive oil

Combine the wheat berries and water in a medium size pot. Bring to a boil cover and reduce the heat. Cook for 60 minutes.

Combine raisins, tomatoes, cucumbers, spinach, garbanzo beans, mint, and feta cheese in a large salad bowl.

Whisk the remaining ingredients together in a small bowl to make a dressing.

Add the wheat berries to the salad bowl and toss everything together.

Pour the dressing over the top and toss again.
