Ingredients
½ cup Napa cabbage finely sliced
1-2 green onions minced
2 cups grated veggies like sweet potato, zucchini, turnips and/or carrots
¼ cup flour
½ teaspoon sea salt
4 eggs whisked
Olive oil for frying
Plain whole milk yogurt

Add all the ingredients together. Mix well.

Heat oil in a skillet over medium-high heat. Reduce the heat to medium.

Drop a large spoonful of the mixture into the skillet. Using a spatula, flip the fritters when the bottom is brown, about 2-3 minutes. The fritters should be crunchy on the outside and moist inside.

When both sides are brown, remove to a plate and cover to keep warm.

Serve with a dollop of plain whole milk yogurt.
