Tamari Glazed Sweet Potatoes

This is a unique way to prepare sweet potatoes, wonderful as a snack or with a burger.

3 large sweet potatoes
1 tablespoon toasted sesame oil
2 tablespoons brown sugar
2 tablespoons mirin
1 tablespoon garlic minced fine
3 tablespoons tamari
¼ cup water
Pre-heat oven to 400 degrees.

Wash the potatoes and cut into quarters the long way.

Place in a baking dish in a single layer.

Combine all the remaining ingredients. Brush all of the sauce over the potatoes and cover tightly with foil.

Bake until nearly tender about 50-60 minutes. Remove the foil and baste potatoes with the glaze again. Continue to cook until the potatoes are done and the liquid has reduced to a glaze. This will take about 20 minutes.
