Stir Fry Asparagus with Red Peppers and Almonds

Ingredients
1 tablespoon toasted sesame oil
1 small red onion diced fine
1 bunch asparagus ends snapped and remainder cut into 1 ½ inch angle cuts
1 red bell pepper cut into thin strips
1 teaspoon sea salt
3 large cloves garlic
1 ½ teaspoons toasted sesame oil
¼ cup tamari
1 ½ tablespoons rice wine vinegar
1 ounce piece fresh ginger chipped
¼ cup smooth almond butter
1 ½ tablespoons maple syrup
Water to thin if needed

3 large cloves garlic
1 ½ teaspoons toasted sesame oil
¼ cup tamari
1 ½ tablespoons rice wine vinegar
1 ounce piece fresh ginger chipped
¼ cup smooth almond butter
1 ½ tablespoons maple syrup
Water to thin if needed

Heat a large skillet or wok over medium high heat. Add the oil then the onion. Stir for a few minutes.

Add the asparagus coating with oil then add the pepper. Continue stirring for a few minutes.

Add the salt stir a little longer and remove from the heat.

Blend all the remaining ingredients in a blender until a smooth sauce is achieved.

Serve the veggies over rice or quinoa with the sauce drizzled on top.
