2 pounds new season potatoes cut into ½ inch cubes
2 red-ripe tomatoes
4 roasted, peeled Anaheim fresh chilies, cut into rough chunks
4 tablespoons butter
½ teaspoon cumin
½ teaspoon sea salt
cilantro and green onion, chopped

Place the diced potatoes in a steamer basket, and steam until tender.

Pulse the tomatoes and chile in a food processor until finely chopped, but not pureed.

In a skillet large enough to hold the potatoes, melt the butter over medium heat. When it sizzles, add the cumin, then the tomato, chile mixture. Add the sea salt. Simmer until heated through.

Add the potatoes, and mix the chile butter into the potatoes.

Transfer to a serving platter, and garnish with the cilantro and green onion.
