Simple Watermelon Salad

Ingredients
½ medium red onion or a few shallots
½ - ⅓ cup fresh lime juice

3 lbs of watermelon (about half of a large melon)
8 oz feta cheese
½ cup fresh mint, chopped
¼ cup parsley, roughly chopped

¼ cup olive oil
⅔ cup Kalamata olives, pitted & chopped

Slice the red onion into thin half moons. Place in a small bowl and cover with the lime juice to marinate.

Chop the watermelon into bite sized chunks and place in a large serving dish.

Crumble or slice the feta into ½ inch pieces, toss over the watermelon. Sprinkle with the mint and parsley.

Add the lime juice, marinated onion, olives and olive oil to the watermelon. Toss gently with your hands. Taste for acidity and add more lime juice if desired. Serve immediately.
