If you thought that pulled pork would take hours to make and require secret sauce recipes, check out our quick version that is ready to eat in 30 minutes.
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon sea salt
½ teaspoon black pepper
1 ½ to 2 pounds pork tenderloins cut into 1 inch thick slices
1 tablespoon safflower oil
½ cup chicken stock
½ cup barbecue sauce
3 tablespoons cider vinegar
Combine all the spices with the salt and pepper.
Place the sliced raw pork on a cutting board and rub with the dry mixture.
Heat the oil in a large skillet over medium high heat. Add the pork and sear until well browned on both sides, about 5 minutes per side. Transfer to a bowl and cover with foil. Let sit for about 5 minutes.
Using 2 forks to shred meat into bite-sized pieces.
Meanwhile add the broth, barbecue sauce and vinegar to the empty skillet. Simmer over low heat scraping up any browned bits. Continue to cook until thickened. Stir in the shredded pork and heat through. Add more salt and pepper if needed.
Serve on a bun with pickles.
