Ingredients
4 Anaheim chilies
3 scallions, thinly sliced
3 tablespoons cilantro, chopped
1 tablespoons mint, chopped
1 ½ cups ricotta cheese
½ teaspoon sea salt

Place the chilies on a cookie sheet and broil until blistered on one side.

Turn over and blister on the other side.

Remove from the oven, place in a plastic bag or a bowl with a tight fitting lid to sweat for about 10 minutes. Slip skins off and remove seeds and veins. Chop the chilies into ¼ inch dice.

Stir the scallions, cilantro, mint, cheese, and salt together. Add the chilies when they are ready.

Suggestions for using the cheese:
- Spread on refried beans.
- Wrap in warm corn tortillas.
- Dollop on your favorite veggies.
- Use in roll-up sandwiches with other fillings like avocado, tomato, and lettuce.
- Add a dollop to chicken or tortilla soup.
- Make a Mexican spiced stew and add the spread to each serving.
