Forbidden Rice Pilaf with Pistachios and Apricots

1 cup forbidden rice
2 cups water
½ teaspoon sea salt
⅓ cup dried apricots, diced
⅓ cup pistachios raw
1 inch piece of fresh ginger, diced fine

Pre-heat oven to 350 degrees.

Bring 2 cups of water to a boil. Add the rice reduce the heat cover and simmer for about 30 minutes.

When the rice is done add the diced apricots cover and let sit for 10 minutes.

Roast the pistachios in a 350 degree oven for about 7 minutes or until aromatic.

Remove the rice from the pan to a bowl and toss with the nuts and diced ginger.
