Coconut Curry Noodles with Pork

3 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon sea salt
1 tablespoon Thai Kitchen red curry paste
1 tablespoon oil
3 cups coconut milk
½ lb. boneless pork chops, cut into ½ inch pieces
1 tablespoon cane sugar
1 cup water
3 tablespoons fish sauce
1 tablespoon lime juice
1 lb. soba noodles
Lime wedges
Scallions, chopped fine
1 teaspoon ground turmeric
1 teaspoon sea salt

3 cups coconut milk
½ lb. boneless pork chops, cut into ½ inch pieces
1 tablespoon cane sugar
1 cup water
3 tablespoons fish sauce
1 tablespoon lime juice
1 lb. soba noodles

Combine the garlic, turmeric, and curry paste in a small bowl and mash together.

Heat the oil in a heavy pot, and toss in the curry mixture. Stir fry for 30 seconds.

Add ½ cup of the coconut milk, bring to a simmer. Add the meat and sugar.

Continue to cook until the meat has changed color.

Add the remaining coconut milk, water, fish sauce, and the salt. Bring to a boil, then reduce heat to medium and cook at a strong simmer about 10 minutes.

Cook the noodles according to package instructions. Drain and divide into four serving bowls.

Ladle the curry over the noodles.

Serve with the lime and scallions.
