½ cup organic grade B maple syrup
½ cup molasses
½ cup light olive oil
1 tablespoon vanilla
1 tablespoon instant coffee dissolved in ½ cup warm water
2 tablespoons ginger juice
2 ¼ cups spelt whole grain flour
½ teaspoon soda
2 teaspoons baking powder
½ teaspoon sea salt
½ teaspoon ground cloves
1 teaspoon dry mustard powder
½ - 1 teaspoon black pepper
½ teaspoon cinnamon
½ cup molasses

Pre-heat oven to 375˚F

Combine the sweeteners and the oil. Beat well with a wire whisk.

Add the vanilla dissolved coffee and ginger juice. Mix well.

In a separate large bowl combine all of the dry ingredients.

Make a well in the center and add the wet ingredients stirring well to combine.

Oil a 9x9 inch baking pan. Pour in the batter and bake for about 30 minutes.
