Apple Bacon Pancakes

Bacon and pancakes are always a favorite, but what about putting the bacon right in the pancakes? Try it and see, you can make your own bacon bits, add some minced apple and top your cakes with yogurt or maple syrup. So delicious!

¾ cup plus 2 tablespoons spelt whole grain flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt
1 tablespoon brown sugar
1 large egg plus 1egg white
½ cup buttermilk
1 medium apple peeled and diced fine
4 slices cooked bacon, crumbled
Oil or butter for greasing a skillet

Combine all the dry ingredients in a small bowl.

Whisk the eggs and buttermilk in a large bowl.

Stir in the dry ingredients, apples and bacon until just combined.

Heat a large skillet and add oil to coat the bottom of the pan. Use about a ¼ cup of batter per pancake and gently spread in the skillet to make a 3 inch diameter pancake. Cook until bubbles begin to form. Flip and cook until golden brown on the other side.

Serve the cooked pancakes with a little plain yogurt and applesauce.
