Ingredients
4 large potatoes (Yukon Gold or Red)
2 tablespoons olive oil
¼ cup water
2 large cloves garlic finely minced
½ teaspoon salt
A pinch of black pepper
1 heaping tablespoon fresh rosemary minced

Pre-heat oven to 425 degrees.

Wash and scrub potatoes.

Cut the potatoes in half lengthwise then cut the halves into thirds.

In a 10-inch pan combine olive oil water garlic salt pepper and rosemary. Add the potatoes and toss well.

Roast the potatoes in the oven for about 30 minutes.

Check them every 10 minutes and stir them once or twice.

The potatoes will be done when they are “fork tender”.
