Cranberry Orange Bread

This quick bread is so fast you'll want it every winter weekend morning. Great for the holidays.

Ingredients
½ cup walnuts or pecans
2 cups whole wheat flour (or ½ white ½ whole wheat)
1 tablespoon baking powder
½ teaspoon salt
¼ cup butter softened
¾ cup brown sugar
2 eggs slightly beaten
½ cup orange juice concentrate
½ cup plain yogurt
2 teaspoons grated orange zest
1 ¼ cup fresh cranberries

Pre-heat oven to 350 degrees.

Chop nuts and set aside.

Sift all dry ingredients.

Cream butter and sugar. Add eggs and beat well. Add orange concentrate yogurt and zest.

Fold dry ingredients into wet mixture.

Gently fold in cranberries, then the nuts.

Place in a greased loaf pan.

Bake for 1 hour.

Cool in the pan before removing.
