You will enjoy this hardy, meaty frittata with a hint of sage!
3 tablespoons Extra Virgin Olive Oil
1 medium yellow onion diced fine
1 pound Smart Chicken Sausage
1 tablespoon fresh sage chopped fine
1 teaspoon sea salt
Black pepper to taste
6 to 8 eggs beaten
Preheat oven to broil.
Steam the potatoes until fork tender and set aside in a large bowl.
Heat 1 tablespoon oil in a large skillet and sauté the onions until transparent.
Add the sausage and continue cooking until it is well browned and cooked through. Add the sage and salt and give a few more stirs. Add the black pepper.
Pour the skillet contents into the bowl with the potatoes. Wash and dry the skillet.
Add the beaten eggs to the bowl.
Heat the skillet and add the remaining 2 tablespoons of oil. Pour the egg mixture into the skillet. Cook over low heat for about 10 minutes or until the eggs are almost set.
Place skillet under the broiler and broil until the frittata puffs up and begins to turn golden about 1 minute.
