For breakfast, lunch or dinner whip up this delicious frittata. Serve with a green salad on the side.
3 tablespoons butter
½ cup shallots, minced
1 ½ cups asparagus cut into bite sized pieces
4 green onions, chopped
8 large eggs
1 cup cheese, grated
½ teaspoon sea salt
½ teaspoon black pepper
1-2 tablespoons fresh herbs like basil or marjoram
Pre-heat the broiler
Heat a 10-inch diameter cast iron skillet. Add the sausage and fry until it is well browned and cooked through. Remove from skillet and set aside. Rinse and dry the skillet.
Melt 2 tablespoons of the butter in the skillet.
Sauté the shallots and asparagus until they are barely tender (about 5-7 minutes).
Whisk eggs, ½ cup of the cheese, salt, pepper, herbs, and green onion.
Add the remaining tablespoon of butter to the sautéing veggies and let it melt. Add cooked sausage.
Pour the egg mixture into the skillet and gently fold the eggs and vegetables together. Cook until almost set.
Sprinkle with the remaining cheese.
Broil until the frittata puffs and the cheese begins to turn golden.
Cut into wedges and serve.
