Ingredients
¾ cup balsamic vinegar
2 sprigs fresh thyme
Sea salt
2 firm ripe peaches halved and pitted
1 ½ tablespoons extra virgin olive oil
4 cups mixed salad greens
5-7 ounces soft goat cheese

Place the vinegar and thyme in a small sauce pan. Bring to a boil and reduce to ¼ cup total. Remove thyme and set aside.

Rub the peaches with 2 teaspoons of the olive oil and a pinch of sea salt.

Grill cut side down until lightly charred 3-4 minutes. Place on a cutting board to cool and then cut each half into thirds.

To compose the salad, place the greens in a bowl. Toss with the remaining oil and a little salt. Arrange on a serving platter.

Top with the peaches and crumbled goat cheese. Drizzle with 2 tablespoons of the reduced vinegar. Add more if needed.
