1 ½ cups spelt or unbleached white flour

½ cup cane sugar
½ teaspoon sea salt
½ teaspoon cinnamon
1 egg
½ cup milk
¼ cup olive oil
1 ½ cup apple, chopped
Streusel
½ cup almonds
4 tablespoons butter, melted
2 tablespoons honey
¾ cup spelt or unbleached white flour

Streusel
½ cup almonds
4 tablespoons butter, melted
2 tablespoons honey
¾ cup spelt or unbleached white flour

Preheat oven to 300 degrees. Increase the temperature to 400 degrees after you remove the almonds from the oven.

In a medium size bowl, sift all the cake dry ingredients together.

In a smaller bowl, beat the egg. Add the milk and oil. Beat again until well mixed.

Pour the wet ingredients into the dry, add the chopped apples, and mix again.

Place the almonds on a dry cookie sheet. Roast in the oven for about 7 minutes. Chop fine.

Combine the butter and honey. Sprinkle in the flour salt and nuts to make a crumbly topping.

Grease an 8x8 inch baking pan. Pour the batter into the pan. Sprinkle the streusel on top.

Bake at 400 degrees for 25 to 30 minutes.
