Fancy Free Frittata

Frittatas are great for breakfast lunch and dinner. They are a great end of the week meal too. Just chop up whatever odds and ends you have from the week add herbs and cheese!

2 plus 1 tablespoons butter
3 cups chopped vegetables of your choice
(for example: sliced mushrooms red or green bell pepper zucchini kale broccoli asparagus red onion)
4 green onions chopped (optional)
8 large eggs
1 cup grated cheese (mild cheddar fontina or feta)
½ teaspoon sea salt
½ teaspoon black pepper
Basil (either ¼ teaspoon dried or 1 tablespoon fresh minced)

Preheat broiler.

Melt 2 tablespoons of the butter in a heavy broiler-proof 10-inch diameter skillet (cast iron works great).

Sauté the 3 cups of vegetables until they are tender (about 5-7 minutes).

Whisk eggs ½ cup of the cheese salt pepper basil and green onion.

Add the remaining tablespoon of butter and let it melt in.

Pour egg mixture into pan and gently fold the eggs and vegetables together. Cook until almost set.

Sprinkle with remaining cheese.

Broil until frittata puffs and cheese begins to turn golden about 1 minute.

Cut into wedges and serve.
