These flavorful vegetarian burgers will surely delight any non meat eater at your table.
1 medium size onion, diced
4 cloves garlic, minced
1 teaspoon cumin
1 teaspoon oregano
¼ teaspoon cayenne pepper
1 teaspoon sea salt
1 egg, slightly beaten
½ cup bread crumbs, lightly toasted
1 ½ cup sautéed or grilled veggies like zucchini, cut into small dice after cooking
Place the beans in the bowl of a food processor. Pulse a couple of times.
Sauté the onion, garlic, cumin, oregano, and cayenne until the onion is soft.
Add the sautéed ingredients to the beans, then add the egg and the bread crumbs.
Pulse again just until chunky.
Place in a bowl and fold in the veggies. If the mixture is too wet, add more bread crumbs.
Wrap tightly in saran wrap and refrigerate for 30 minutes.
To shape burgers, make tennis ball-size rounds and flatten to 1-inch thick burgers.
Heat a cast iron skillet, add oil and sauté each patty for 3 to 5 minutes on each side.
Consider adding your favorite cheese to the side cooked first, cover and let the cheese melt.
Serve with all your favorite trimmings.
