The marinade:
2 tablespoons of fresh lemon juice
¼ cup olive oil
½ teaspoon sea salt
1/8 teaspoon pepper
1-2 cloves of garlic, minced
½ teaspoon ground coriander
½ teaspoon dried oregano
1 pound of Magnolia Farms lamb kabob meat

Prepare grill and skewers.

Grease the grill.

Bamboo skewers should be soaked for several hours before using

Combine all marinade ingredients and coat the lamb meat with the marinade.

Refrigerate for at least two hours.

The lamb may be skewered with vegetables such as bell peppers, onion, mushrooms and cherry tomatoes.

Grill for 6-12 minutes, turning often.
