Ingredients
½ cup dried coconut for rolling
¼ cup dried coconut for cookie batter
1 cup raw almonds or cashews
2 tablespoons raw tahini
1 tablespoon raw honey or agave nectar
7-9 fresh Medjool dates
½ teaspoon allspice
½ teaspoon cardamom
¼ teaspoon cinnamon
¼ teaspoon sea salt
2 teaspoons grated ginger root
¼ cup dried coconut for cookie batter
1 cup raw almonds or cashews
2 tablespoons raw tahini
1 tablespoon raw honey or agave nectar
7-9 fresh Medjool dates
½ teaspoon allspice
½ teaspoon cardamom
¼ teaspoon cinnamon
¼ teaspoon sea salt
2 teaspoons grated ginger root

Place ½ cup of coconut in a food processor, and grind it until it resembles a crumbly meal.

Transfer the meal to a medium bowl and set aside.

Place the remaining ingredients (including ¼ cup of coconut) in the food processor and process until it forms a very thick, course and sticky batter.

Roll the batter into tablespoon-sized balls, and then roll them in the ground coconut.

Serve immediately, or refrigerate in an air tight container.
