This simple but impressive dish makes a great start to Saturday barbeques
Ingredients
Artichokes
- 1- 2 lemons {make sure they are juicy}
- 4 small artichokes, trimmed and halved
- 4 tablespoons olive oil, plus more for brushing
- 4 garlic cloves
- 3 sprigs fresh thyme
- Fresh pepper to taste
- Salt to taste
Aioli
- ½ lemon (the other half from your artichoke)
- ½ cup mayonnaise
- 2 garlic cloves (minced)
- Salt and fresh pepper to taste
Instructions
Preheat the grill to high heat
Cut the lemon in half and squeeze out the juice in a bowl. If the lemon is not juicy use another. Set aside for sauce later. Cut remaining lemon into wedges.
Boil artichokes in water for about 50 min, with 2 tablespoons olive oil, garlic cloves, lemon quarters and thyme. Boil until artichokes are tender.
Remove artichokes from water, and allow them to cool for about 5 minutes. Blot with a paper towel to remove any excess moisture. You can also give them a little shake to remove water in the leaves.
Brush generously with olive oil and sprinkle with salt and pepper. Set on the grill flat side down for about 4 min.
Serve with garlic Aoili.
Aoili:
Blend all the ingredients in a small bowl and serve alongside your artichokes. Garnish with extra fresh ground pepper
