French Lentil and Kale Salad

Another fabulous way to use French Lentils! This salad is a hearty combination of lentils and kale, with a touch of creamy feta cheese.

Ingredients
1 cup French lentils uncooked
1 bunch kale steamed and chopped
¼ cup red onion diced
¼ cup feta cheese crumbled



Dressing
3 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon sea salt
¼ cup cilantro chopped
¼ cup Italian parsley chopped
1 tablespoon shallots cut fine
½ teaspoon black pepper

Wash and cook the lentils in 2 cups water until tender (about 30 minutes). Drain off any excess water.

In a large bowl combine the vinaigrette ingredients.

Add the lentils, kale and red onion. Toss well. Sprinkle the cheese on top.
