4 large or 6 medium size beets
1 bunch kale any variety
Dressing:
Zest from one lime
1-2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
½ teaspoon sea salt
1 large clove garlic minced
¼ cup fresh basil or tarragon chopped
⅓ cup feta crumbled (optional)

Cook the beets by your preferred method until they are fork tender.
