Ingredients
2 cups spelt or unbleached white flour
4 teaspoons baking powder
1 teaspoon sea salt
2 Tablespoons unrefined cane sugar
2 cups dairy or plant-based milk of choice
1 tablespoon butter or oil
2 eggs separated
1 cup cooked mashed winter squash

Sift together the flour baking powder salt and sugar in a mixing bowl.

Add milk butter or oil and slightly beaten egg yolks. Mix well.

Mix in the mashed squash. Add more milk if needed to make a loose batter.

Beat egg whites until stiff peaks form. Fold into first mixture.

Bake on hot lightly oiled griddle turning once.

Serve with applesauce and yogurt.
