Ingredients
1 medium cucumber
3 cups yogurt
2 large cloves garlic
2 Tablespoons fresh mint leaves finely chopped
¼ teaspoon salt (optional)

Peel and grate the cucumber

Over a medium size bowl squeeze the juice out of the grated cucumber and set aside (juice may be chilled and added to ice water for a refreshing drink).

Combine grated cucumber with remaining ingredients.
