Beets and Kale in a Lively Lime Dressing

1 bunch kale any variety
Dressing:
Zest from one lime
1-2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
½ teaspoon sea salt
1 large clove garlic minced
¼ cup fresh basil or tarragon chopped
⅓ cup feta crumbled (optional)
This is a lovely salad to accompany any meal you make. The lime dressing and feta make it a unique beet and kale salad that will have folks back for seconds.
