Expert plant-based pressure cooking teacher and Registered Dietitian Jill Nussinow will share tips, tricks and techniques for using your pressure cooker to your best advantage, or how to choose one if you don’t yet own one. Pressure cooking is a clean, green way to cook - producing great tasting food quickly while retaining maximum nutritional value. You will learn how to cook beans, grains, vegetables and more. The menu will include Beans and Rice and Everything Nice, Atakilt Wat (Ethiopian Cabbage, Carrots and Potatoes), Borscht with a Lemon Twist and Greens and Coconut Almond Risotto. All dishes are gluten- and dairy-free.

Jill Nussinow, aka The Veggie Queen™ is a Registered Dietitian who has been teaching plant-based, whole foods cooking for almost 30 years at Santa Rosa Junior College, other US locations and internationally. She taught at Finley Center in Santa Rosa for 20 years.

Jill is the author of four cookbooks: Vegan Under Pressure, The New Fast Food: The Veggie Queen Pressure Cooks Whole Food Meals in Less than 30 Minutes, Nutrition CHAMPS: The Veggie Queen’s Guide to Eating and Cooking for Optimum Health, Happiness, Energy and Vitality and The Veggie Queen: Vegetables Get the Royal Treatment, and, she stars in the DVDs: Plant-Based Pressure Cooking: Basics and Beyond, Pressure Cooking: A Fresh Look, Delicious Dishes in Minute and Creative Lowfat Vegan Cuisine. Jill speaks and teaches throughout the United States, and beyond, at various venues for professionals and for the public.

Jill shops at the farmer’s market weekly. She also loves mushroom hunting and teaching fermentation classes. She has been teaching people about the joy of eating vegetables and inspiring others to do the same. Jill’s goal is to see everyone leading a healthy, happy life through better eating and cooking. She loves to share the passion and joy of incredible, “real” plant-based food.
