This Friday marks the official start to summer, also known as the Summer Solstice. The day and night will be equal in length and although hot weather is just beginning, the days will start to get shorter until autumn arrives. It always seems such a paradox to me that summer, for which I have been so impatiently waiting, also brings with it the shortening of the days. So, no time to waste! I recently travelled to Asheville, North Carolina for a Deli Conference and while there I indulged in Blueberry Chipotle BBQ ribs at 12 Bones. While there, I asked for the recipe and although they didn’t give me the recipe for their “BBQ sauce” which is an ingredient in the recipe they gave me, they assured me that any BBQ sauce that you make or deem delicious enough to eat will be an excellent base to this. So, I am planning on trying it out to welcome summer and now that you have the recipe, you can too! Let me know how it turns out and what you slathered it on.
Blueberry Chipotle BBQ Sauce
- 1 qt BBQ sauce
- 1 ¼ lb organic blueberries
- 1 cup honey
- 4 small cans of chipotle peppers
- 1 ½ tsp powdered ginger
-Puree the blueberries with the chipotle peppers including the sauce from the can. Add remaining ingredients, slather on whatever you are BBQing, cook and enjoy! This can be stored for 2 weeks in the refrigerator.
