If you’ve been in the store this last month you’ve seen the stacks of luscious stone fruit slowly taking over our produce aisles. We’ve had peaches from Washington, as well as Ashland’s Valley View Orchards, and any day now we’ll have local Rolling Hills peaches. Both Valley View and Rolling Hills handpick and pack their peaches, meaning they can stay on the tree long enough to ripen properly.
Need another reason to love these stunning orbs of sunshine? Peaches are low in calories, containing less than pears or apples. Peaches are high in vitamins A and C, and are a hidden source of calcium.
If I had to pick one peach recipe to eat for the rest of my life, it would be our Rolling Hills Peach Pie. The crust recipe is a stellar mix of coconut oil and butter, resulting in a crumbly, dare I say perfect pie crust, and the peach filling speaks for itself. However you choose to celebrate, do it before September as peaches tend to wane that time of year.
