Packing a lunch for your child to take to school requires proper planning to avoid the lunches you pack ending up in the garbage or traded away. As we approached the school year, I purchased all of the required lunch box reusable paraphernalia required, and got to work packing lunches. Now only 30 days into the school year, my daughter has exclaimed “if I have to eat another almond butter and jam sandwich I am going to pass out.” I realized that the no meat/shellfish rule at her school was limiting my creativity.
This week will be different. I have been brainstorming what to pack in place of the nut butter and jam sandwich, and here is what she will find. I made a big pot of vegan chili over the weekend, so leftovers heated with cheese on top will fill the role on Monday. We had roasted veggies on Monday night so for Tuesday’s lunch she will get the leftover roasted veggies tucked inside a cheesy quesadilla. Yes, my daughter LOVES cheese! For Wednesday, she’ll find a cream cheese and strawberry sandwich, because I still need to use the loaf of bread I bought for nut butter and jam sammies. Thursday will be a super yummy tuna salad with crackers and Friday, well, I just may throw in another almond butter & jam sandwich in, just to call her bluff. This weekend we will do a little baking for next week’s lunches. Next week, I will share recipes!
