Black Bean and Spinach Salad

Ingredients
4 tablespoons extra virgin olive oil
Zest of one orange
Juice of one orange
2 teaspoons balsamic vinegar
1 teaspoon sea salt
3 tablespoons red onion minced
1 bunch of spinach washed and torn
3 cups cooked black beans
1 avocado

Whisk the oil zest orange juice vinegar and sea salt together.

Add the onion spinach and beans tossing into the dressing.

Cut the avocado into ¼ inch strips the long way. Cut these strips in half across and toss them into the salad.

Serve with hot cornbread or wrap in flour tortillas.
