When I think about the flavors of summer I am immediately transported back to a house party a few years ago, where a friend served crackers, goat cheese, basil and tomatoes. This snack is a great example of how simple dishes and seasonal produce can win over your taste buds! Tomatoes are at the peak of their season. Their compadre basil is also busting a move.
A big thanks to our local farmers at Fry Family and Whistling Duck, who have been keeping us stocked with this versatile, pungent herb.
Besides eating basil straight, I love this time of year because of the freedom to make homemade pesto! It’s fabulous on pizza, mixed into mayonnaise for a jazzed-up spread, or simply tossed with noodles. If you find yourself swimming in pesto, throw a jar in the freezer, or pour into ice cube trays, freeze, and store in a large ziplock bag. Then you can pop a few cubes out whenever you need them.
