Salt’s impact on human civilization precedes recorded history, and has influenced human existence in cultural, economic and of course culinary realms. Once traded ounce for ounce for gold, and used to pay people (hence the word salary), it is now a very common part of our recipes and kitchens. In the Deli, we use sea salt exclusively, but at home I also use kosher and Alaea salt. I like the large grains of both varieties that make it easy to pick up with my fingers and toss in the pot. Kosher salt is named due to its ability to make meat kosher by absorbing the liquids on the surface of the meat. Alaea salt comes from Hawaii and is red in color due to the clay content it holds. If you are looking for a high mineral content the French Sel Marin has the highest mineral content of any salt. Stay tuned next week for some simply salty tips.
