This is a great way to celebrate May Day with children, and the results are beautiful and delicious. You will need some freshly picked violets, 1 egg white, fine granulated sugar, a sheet pan, a small paint brush that has never been used for paint and waxed paper. Lay out your violets on the pan so they are easy to grab once your hands get sticky. Beat the egg white with a little water and hold the violet in one hand, or place it on waxed paper and paint the egg white over all of the petals, be generous but not enough to make the petals soggy. Then place the flower into the sugar bowl and sprinkle sugar onto the back side making sure to evenly coat both sides. Place the violet on the wax paper to dry. These will keep in an airtight container for up to 1 year. Use as a garnish for cupcakes, cakes, or any dessert.
